Banana Bread Muffins
This banana bread is more like ‘cake’ but I still call it banana bread. It is delicious. I
don’t make anything better than my mom, but my sister says that this banana bread
is even better than my mom’s banana bread…sooo it is good. Nothing about it is
healthy, and that’s okay. I have made it dairy free by using the oil for butter and
using almond milk and it tastes just as good. I have also added ¼ cup of cocoa to
make it chocolate banana bread, but here is the basic recipe!
1 cup sugar
1 stick butter (8 tbs) at room temperature or 6 tbs vegetable oil
3-4 bananas (super ripe, black bananas)
1 tbs milk
1 tsp cinnamon
2 cups flour
1 tsp baking soda
1 tsp salt
1 cup chocolate chips
Preheat oven to 325. Cream together butter and sugar until smooth. If the butter is
room temperature, this will take 2 minutes. Mix it longer than you think you need to.
While the butter and sugar are mixing, mash 3-4 bananas in a bowl. Add milk and
cinnamon to the bananas. Add 2 eggs to the butter/sugar mix. Then add the banana
mixture. In a separate bowl, sift together flour, baking soda and salt. Then slowly
add to the wet mix. Stir until just combined. Then pour in chocolate chips.
Bake time will depend on what dish you use. I usually make these into muffins, which take
about 20 minutes (you will know when they are done when you poke them with a
toothpick and the toothpick comes out clean). If using a loaf pan, cooking time will
be closer to 45 minutes. The hungry runner in me prefers the muffins because the
shorter cook time means I can eat them sooner! Hope you enjoy!
