Marshmallow Stuffed Chocolate Chip Cookies
I stumbled upon this recipe when one of my friends needed a dessert to take to a
potluck. I looked in my pantry and had some mini marshmallows from when I made
a s’mores cake (I’ll post that recipe soon!). I had chocolate chips. And I had a needy
friend. A quick google later, I stumbled on this recipe. It is epic. I tweaked a few
things, but you’ll be set if you follow the original recipe or my changes. Enjoy!

2 cups flour
½ tsp salt
1 cup sugar
1 tsp baking soda
¼ cup milk
¼ cup oil
1 tsp maple syrup*
1 cup chocolate chips
*I use maple syrup when I don’t have vanilla extract. Usually, it’s a 1 to 1 ratio for a
substitute but I added more in this recipe for a little extra sweetness and flavor. If
you prefer, use ½ tsp vanilla extract instead of the maple syrup.
Preheat your oven to 325. Combine dry ingredients (2 cups flour, ½ tsp salt, 1 cup
sugar, 1 tsp baking soda). Then, stir in the wet ingredients (¼ cup milk, ¼ cup oil, 1
tsp maple syrup). Then, stir in chocolate chips.
The dough will feel SO crumbly and dry. That’s okay! Use your hand to form a small
dough patty in the palm of your hand. If you’re unable to do this step, and the dough
is too crumbly, add 1tbs of milk.
Once you form the patty, put 2 mini marshmallows in the middle of the patty. Then,
form the patty around the marshmallows and form into a ball. Once you have the
ball formed, go ahead and smush (not a real word but just go with it) a few more
chocolate chips on the top of the ball. Just for good measure. Put all dough balls in
the fridge for 30 minutes. This is a really important step. If you can’t wait 30
minutes, throw them in the freezer for 10 minutes. I promise, it makes the cookies
way better. They will spread less because it solidifies the oil in the cookie. Also,
google tells me that the sugar absorbs some of the liquid, which gives the cookie a
better flavor. Just trust me.
Bake cookies for 11 minutes and let cool before enjoying.
